Green Goodness Soup

Ingredients

  • 1 tbsp olive oil or ghee

  • 1 leek, chopped

  • 2 cloves garlic, minced

  • 1 thumb-sized piece of ginger, grated

  • 2 zucchinis, chopped

  • 1 head broccoli, chopped into florets

  • 2 cups baby spinach (or kale)

  • 1 small bunch parsley (stems and all)

  • 4 cups vegetable or chicken bone broth

  • Juice of ½ lemon

  • Sea salt and black pepper, to taste

  • ½ cup coconut milk (or more if you would like it creamier)

Method

  1. Heat olive oil or ghee in a large pot. Add leek and sauté until translucent. Add garlic and ginger, cook for another minute.

  2. Stir in zucchini, broccoli, pour in the broth and bring to a boil. Reduce to a gentle simmer for 15–20 minutes, until vegetables are soft.

  3. Add spinach and parsley. Stir until just wilted (1–2 minutes) to keep the vibrant colour.

  4. Add coconut milk

  5. Use a stick blender or transfer to a blender and puree until smooth.

  6. Season with salt and pepper to taste, and a squeeze of lemon.
