Green Goodness Soup

Ingredients

1 tbsp olive oil or ghee

1 leek, chopped

2 cloves garlic, minced

1 thumb-sized piece of ginger, grated

2 zucchinis, chopped

1 head broccoli, chopped into florets

2 cups baby spinach (or kale)

1 small bunch parsley (stems and all)

4 cups vegetable or chicken bone broth

Juice of ½ lemon

Sea salt and black pepper, to taste

½ cup coconut milk (or more if you would like it creamier)
Method

Heat olive oil or ghee in a large pot. Add leek and sauté until translucent. Add garlic and ginger, cook for another minute.

Stir in zucchini, broccoli, pour in the broth and bring to a boil. Reduce to a gentle simmer for 15–20 minutes, until vegetables are soft.

Add spinach and parsley. Stir until just wilted (1–2 minutes) to keep the vibrant colour.

Add coconut milk

Use a stick blender or transfer to a blender and puree until smooth.

Season with salt and pepper to taste, and a squeeze of lemon.
